1. Monthly Chores
    1. These can be found on the corresponding Monthly Maintenance Chore sheet.
    2. Find the appropriate day of the month and write in chore 
  2. Clean inside and outside of cabinets and doors in Barista area:
    1. Wipe down fronts of all cabinets in barista area.  
    2. Wipe down inside of all doors. 
    3. Pull out all boxes and wipe down entire area of all cabinets in barista area.
  3. Clean retail shelves/cabinets and shelves in front of espresso machine.  Restock
    1. Pull merchandise off of all retail shelving in front of espresso machine
    2. Clean fronts, tops, and backs of shelves
    3. Make sure merchandise is fully stocked or grab more from back
  4. Clean restroom walls, scrub floors , and baseboards
    1. Clean any dirty spots off walls with a wet cloth
    2. Fill sanibucket with floor cleaner and use small scrub brush to get any residue off floors and baseboards
  5. Clean trash cans in customer prep area and dining room inside and outside
    1. Empty trash in cans (1 under customer prep table and 1 by front door)
    2. Bring back to mop sink and hose out
    3. Replace out front with new trash bags
  6. Clean reach-in display case: front, top, and inside
    1. Wipe down top of case
    2. Clean all glass with glass cleaner and paper towel
    3. Remove product and wipe down interior
    4. Clean grill inside case
    5. Remove front panel and back panel and vacuum off coils
  7. Clean walls in dining area, dust windowsills, chair rail, and art work
    1. Clean spots on any walls with wet cloth
    2. Dust all mentioned items
  8. Clean POS area, drawers, counter, demo cups, organize POP area
    1. Wipe down all counters in front of, around, and behind POP
    2. Wipe down shelves around and under POP
    3. Clean out all drawers under POP and organize items inside
    4. Clean retail food display and make sure fully stocked
    5. Clean POP screen with clean damp cloth
    6. Make sure all brochures are stocked
    7. Make sure back up frequency cards, coffee cards, etc are on hand or let manager know items needed to order
  9. Dust all merchandise and make sure all items are priced
    1. This involves making sure all merchandise is dusted on all retail shelves
    2. All merchandise must have a price on the bottom
    3. Coffees and teas must have a date on the bottom
  10. Wipe the wall above the entire back counter
    1. This is the back counter of the Barista area
    2. Wipe off all spills and marks on wall and bulkhead
    3. Move any equipment that is in the way
  11. Clean and organize walk-in and freezers in the kitchen
    1. All open boxes should have flaps cut off
    2. Make sure walk-in floor is cleaned
    3. No outdated food
    4. Organized shelves per labels
    5. Clean exterior cabinet of freezer
    6. Wipe interior including bottom shelf
  12. Pickup and sweep the sidewalk and parking lot.   Check all landscaping for debris
    1. All parking lots in front of and along building.
    2. Drive thru lane
    3. Customer patio area
    4. Pick up all trash in landscaping
  13. Clean and organize customer prep area, the cabinets below, pans, microwave, and napkin and condiment holders
    1. All pans and holders must be taken back and washed
    2. Make sure all items are fully stocked
    3. Clean inside, outside, and under microwave
    4. Pull out all boxes under cabinet and clean inside cabinet thoroughly
  14. Scrub kitchen floor corners, under triple sink, freezer, ice machine, and shelving units  WS
    1. Scrub all corners of BOH floor
    2. Pull out shelving units and sweep, mop, and scrub under
    3. Sweep, mop, and scrub under triple sink and ice machine
    4. WS = Water Softener
      • Nightly chore
      • Do at 8pm and follow instructions near Water Softener
  15. Clean air vents in bathrooms, FOH, and BOH
    1. Use pole duster to dust all air vents
  16. Clean behind under counter reach-ins, also outside and inside. Check and wipe gaskets
    1. Pull out reach ins
    2. Sweep, mop, and scrub floor underneath
    3. Pull off and vacuum behind rear grill
    4. Clean entire exterior
    5. Clean door, ceiling, floor, walls, and shelves of interior
    6. Clean gasket in between grooves, front, side, underside, and along door
  17. Clean the trash cans behind the counter inside and outside
    1. Empty trash in cans (1 under customer prep table and 1 by front door)
    2. Bring back to mop sink and hose out
    3. Replace out front with new trash bags
  18. Move and clean behind equipment on back counter area
    1. Move grinders, brewers, etc. and clean counter thoroughly around
  19. Clean kitchen trash cans.  Organize chemical shelves
    1. Empty trash in cans (all BOH cans)
    2. Bring back to mop sink and hose out
    3. Replace out front with new trash bags
    4. Organize chemical shelf to be clean and tidy
  20. Clean the mop sink and wipe down surrounding walls
    1. Clean mop sink with bleach and rinse out
    2. Clean surrounding walls with Easy Off Oven Cleaner
  21. Wipe down walls above and below triple sink and dish area.  Clean triple sink floor drain
    1. Clean surrounding walls with Easy Off Oven Cleaner
    2. Use drain and the toilet brush to clean drain under triple sink
    3. Also clean floor drain under front hand sink
  22. Clean the shelves above the back counter
    1. Remove and dust all items on all shelves above the back counter and clean shelves inside and out
  23. Clean tables, chair legs, (and under cushions of soft chairs)
    1. Use all purpose cleaner and towel to wipe tops, legs and feet of all tables and chairs
    2. Clean sides of soft seating and clean under cushions
  24. Wash and reorganize the prep utensil bus tub, and the bus tubs that hold lids.  Clean dish racks
    1. Pull all bus tubs and wash tubs and dishes inside.
    2. Make sure shelves are organized and clean
  25. Clean the Espresso grinders and hoppers with lemon juice
    1. Remove hopper and dump beans in back up bin
    2. Thoroughly clean hopper with lemon juice
    3. Replace hopper and put beans back in
  26. Clean under espresso machine, cabinets below and dipperwell
    1. Clean counters under espresso machine
    2. Clean water softener and shelf around
    3. Scrub tile floor under water softener
    4. Clean drain
  27. Clean top of espresso machine, replace straw/lid pans
    1. Clean all loose coffee beans off top of machine
    2. Wash all straw and lid holders around machine
  28. Clean and reorganize prep area and shelf under prep table.  Check Food label supply.  WS
    1. Clean and organize prep rack
    2. Clean prep table and shelf under.
    3. Make sure good quantity of food labels and let manager know of any needed to order
    4. WS = Water Softener

  29. Scrub baseboards and edges of Barista area
    1. Scrub kickplates of all cabinets of Barista area
    2. Scrub edges and corners of tile floor in Barista area
  30. Clean/replace and refill garnish and honey bottles
    1. Empty and wash garnish bottles and refill
  31. Wash syrup racks
    1. Pull syrup bottles off racks and bring back and wash
  32. Replace mop head
    1. Put new head on mop
